I think just title is enough for you to know what I want to know. I have seen some motherboard act differently on converting from RAID to AHCI and mind is Dell Optiplex 960 so I want to know the procedure of converting it.
How may HDDs / SSDs are you using? Also if you are suing RAID, which type? If it is mirrored or having only one HDD, Just change it from the BIOS setup. Sometimes with lack of Drivers Windows may not load. You can use a Windows disk to have the startup repair to correct this.
You can always go back to your old settings by just setting them on BIOS.

I have one HHD and don't know which RAID I am using.
About changing it from BIOS, I will do it but want to know if my data is safe or not. This is first time changing from RAID to AHCI mode.
