I know the PSU is kinda too much but I may add some extra stuff. Also I chose 16GB of RAM because I may be in the situation of hosting a server. Should I hop in a SSD either ?

Okay looks good but for a gaming build I would just suggest the 3570k, the price of a 3930k is insane when you compare it to a 3570k. You could also replace the H80 with this air cooler:
http://www.newegg.com/Product/Product.aspx?Item=N82E16835709001

Beats the H80 and costs less.

With the money you save from the processor grab an SSD, or if you want drop another card to crossfire.

My reason is that I believe there is very little difference between an i5 and i7 in gaming and for the price you pay that is not worth it.

I gotta agree with sosialfox on the CPU and SSD. The 3570k will do a great job (also easy to OC) and it saves you alot of $$.
I would add an SSD disc to this build. Your would not regret it : )
Boots faster, starts games faster, etc.
You could add another GPU, but you should be able to play all games on ultra with this rig and just add another card later on when it's cheaper and games have higher requirements. Getting the 3570k CPU won't bottleneck your system even if you decide to go crossfire.
I have had some issues with the Western Digital Green discs, but that might just be me. I prefer the http://www.newegg.com/Product/Product.aspx?Item=N82E16822148844 , the choise if yours though.

Good luck with your new rig! Your gonna love it : )
