Hi guys, I'm a computer programmer so I would like to build a computer that can handle gaming but most importantly to be reliable and handle 3 monitors without a problem. My current laptop just isnt up to the task now days. Its a hp envy m6 i5-3210M, 16gb ram, running Intel(R) HD 4000. Back when I purchased it 5 years ago it was more than enough power but now days its just enough if you can relate. I've done some research and I've come up with a build that I think suits my needs but I'm looking for anyone who has any constructive opinions on what I've chosen. I would like to stay within 700-800 dollars.

Foot Note: I will be purchasing most of my parts from microcenter which is a short drive from my house which as incredible warranties. If a part fails, go in and simply get a new one or use the "price it was bought at" as credit to a newer model or anything you would like in their store.

Case (not too sure whether to get a mid tower or a full tower.)
NZXT S340 ATX Mid Tower Case

Or
NZXT H440 White Full Tower

Power Supply
Coolmax ZPG-1200B 1200W Modular ATX Power Supply

-NOTE: I know this power supply is a bit over-sized but I've read good things about the price vs the performance.

Mother board
ASUS Z97-AR LGA 1150 Intel ATX Motherboard

Ram (Would like to have 16 gbs)
-Just 4 4gb ram sticks. I've read that having four 4gb ram cards are faster than having two 8gb cards as it can drive from 4 spots rather than two. Any truth to this?

Processor
i7 4790

Cooling
Corsair Hydro H100i

Hardrive (I dont need that big of a hard drive as I use virtual open source platforms which hold programming projects)
WD 500GB 7,200 RPM SATA III 6.0Gb/s 2.5" Internal Hard Drive WD5000BPKX - OEM

SSD (Just for speed)
Samsung 840 EVO Series 250GB

Graphics card (Still debating) Should I just get a single graphics card or get 2 to run three monitors?

Thank you for any sugestions/changes you would make!

S340. No need for H440.
Power supply is way overkill. Save yourself maybe 50 bucks and something smaller.
Motherboard is good, although you could consider something cheaper if you're not overclocking.
For ram, yes it is better to have more sticks, so they can share the load evenly. Just get the cheapest 4x4GB 1600mhz ram you can find from a well known and respectable company like corsair, crucial, gskill, patriot, etc...
For the processor, you can go with something lower since you are doing a budget build. Maybe get an i5-4690k, which is 80$ cheaper and the best i5 out there.
For the graphics card, go AMD if you are doing multimonitor. I recommend a r9 280x. Just one is enough, but make sure you have a lot of vram, because you need it for multiple monitors.
