hey im trying to decide between these 2 processors. ill mostly be gaming and OCing slightly if at all. Ive read that the 3570k gets a little hot when you OC. I would only be OCing to prob 4.0 to 4.2ghz and ill be buying a decent aftermarket air cooler. I would love some solid suggestions with reasons. Ive read all around the internet and have seen alot of conflicting things. The 2500k doesnt support 1600mhz ram. Not sure if ill be buying 1600mhz or 1333mhz yet but the option for either is nice. ill be running the processor in a ASRock Z77 Extreme4 LGA 1155 Intel Motherboard. Also ive got 680 watt PSU

alright cool. i probably wont even OC cause ill be gaming and such which wont require lots of CPU power but i was considering 1600mhz RAM so i wanted the IB

Sandy Bridge also runs 1600Mhz RAM. It runs pretty much any RAM. haha

What is your hardware setup? If you are running two very powerful cards, I would go with the SB chip and OC it a lot so you get all the GPU power too.

it only officially supports 1066 and 1333. but it does run 1600, 1866 and 2133 with the proper motherboard.

i prefer sandybridge over ivybridge, ivybridge does save energy under load but intel cheaped out on a couple things and the consquences are 20 degrees celcius when heavily overclocked. people say the ipc on ivy is better, but theyre pretty much the same, with sandybridge actually having a better ipc in some things (like winrar.) sandybridge not only overclocks better, does it cooler but its a proven workhorse. they dont die. ivybridge runs waay hotter when overclocked, doesnt overclock as well and isnt a proven work horse.

at this point, i prefer sandybridge

It does support 1600 + though. Pretty much any RAM you through at it with a motherboard that supports it. :)

Ivy bridge wasn't a huge upgrade with the exception of the iGPU and the power saving.

The SB TDP is 95 and IB is 77w. The IB is better in energy. If you want to OC without your fans ramping up too much and being able to hit 4.5Ghz easily, then go for SB. :) Plus SB is cheaper, which means you can take that money and put it towards a GPU, board, RAM, etc. :)
