Chrome vs Edge Stream/Video Max Resolution

I recently found out that Netflix streams max 720p on Chrome browser and up to 4k on Edge. But i am wondering if that applies to other video sites? For example Twitch and Youtube? I pulled up a 4k youtube video on Chrome and Edge and got it to about the same time stamp and alt-tabbed between the windows and i didn't see a difference.

This is truly baffling me, any help/info is appreciated.

I will also mention that i read that i 4k streaming required a 7th generation processor and i am on a 4th gen, so i am curious if that is why i couldn't tell. I also know that something is different on the YouTube video, at least for the data stream, because i can noticeably tell the buffer speed difference between 1080p/1440p/4k.
