It's not the hard drive, It sounds like you bending back a piece of metal then you let go and it smacks into the other piece of metal. case is nzxt s340

Note: only happens when playing games

It could be a relay. Some power supplies have them, but more commonly they are found in audio devices. They physically switch the audio ports so there is no crosstalk or bleedthrough.

Maybe try updating your audio drivers. But I had a computer do this every time on boot up and it is still working. Last I checked, I really should finish putting it back together. As I slowly upgraded, I ended up with all the parts needed to build a 2015 era gaming PC.

I think it might be my gpu. I rammed my gpu fans up to 100% and instantly heard a click

Also I messed up multiple times when applying thermal paste onto my cpu, had to remove about 3 times. Could this be the issue? hyper 212x

Faulty GPU fan, send it back if it is still under warranty. If not, replacement cooler or wait until it fails.

Unless you installed it incorrectly or damaged the fan in the process, I don't see why. You could dismount the fan and see if it might have been hitting the heatsink in some way.
