Comp caught fire, need help building new one

Hello all,

As the title says, my workstation caught fire due to some faulty connectors that the company I bought it from used in the build. They are sending a replacement computer but it will take too long for it to arrive (about 1-2 months) and I was planning on purchasing a new system anyway.

I am looking to replace this system:
- Processor: Dual Xeon E5504 @ 2.00 GHZ
- RAM: 12 GB ECC
- Motherboard: Supermicro X8DAH+-f
- Graphics: Nvidia Quadro 2000
- HD: Two 1TB Seagate Barracuda in Raid 1

I have some of the components already but I could really use some help on picking the other components. I have:
- Corsair HX850 PSU
- 2x 2TB Seagate Constellation ES hard drives
- Nvidia Quadro 2000 graphics card
- Raid card (Not sure which one as it's in a temporary build at the moment, I can pull it if needed)

I need to some advice on selecting:
- Motherboard (needs to fit the previous X8DAH server case since it is part of a server rack setup, EEATX I believe)
- Processor (I can't decide whether it should be dual processor or single)
- Ram (32GB or 64GB, depending on cost)
- SSD (looking for 250GB range, I was thinking 256GB Samsung 840 pro)

Estimated Budget:
$2000-3000
May be able to get more if I can justify it

Uses:
I am a researcher for a university that captures and processes images for my research so I need a good amount of processing power. My budget for the components is frustratingly unknown as my boss will not tell me how much he is willing to spend but I estimate it is about $3000 max.
