So I was on my PC like usual playing games. Everything was fine, put my PC to sleep to go have dinner. I came back and turned it on, it powered on like normal...but no display? It then powered off. Turned it back on and same thing, except now it's just running with no display? Any ideas?

This issue could be due to power settings or driver which may be causing pc not to recover from sleep mode. I think you can work this out by keeping your power settings to always on, it may solve your issue and if the issue still persists then completely uninstall drives from your computer after that download and install the stable version from your video card vendor.

The jury is still out about whether it is better for the computer to power cycle it multiple times per day or just leave it on all the time.
I have always left mine on 24/7 and that's going back 30 years. None of those PCs and their components ever suffered a premature failure.
It is very much a personal preference thing.
Do you Back Up your computer every day?

Yeah well I'm not sure. I put it to sleep all the time and it's never happened until tonight

I run my PC 24/7 for two reasons. I have servers to manage and I have the same exact problem as you. Intel i7-6700k on MSI Krait Z170 with GTX 1080 and Windows 10 pro. I have never gotten the computer to come back from either Sleep or Hibernation. The computer powers on and stays at a black screen. Sometimes the USB devices will power on (keyboard & mouse) sometimes they will stay dark. But the computer will always stay at a black screen. Normal power cycles (shut down) pose no problems.

An issue I have that may tie in with the problem but haven't been able to properly trouble shoot is the intel graphics drivers. I use OBS with intel QuickSync and to get that to work I must install and run the intel graphics drivers which I suspect messes up my monitor. My main monitor uses DP and every now and then it will just go black. I must power cycle the monitor to get it to come back. Disabling the iGPU in BIOS solves this problem. Switching to DVI or HDMI will also solve the problem.

Good luck, sorry for not providing much, but know that you are not alone.

Okay Update time:
My PC will now turn on after I reseated graphics card and ram, but now after I give it a load like loading a game etc it just crashes on the last frame and buzzes from my headphones, forcing me to restart. Now I am clueless
