Your uses of computers seem to benefit from i7. Look at the non-gaming benchmarks.

For mobo, look at ASUS P6T vanilla or deluxe. Pair it with 6+ GB DDR3 ram of any speed. And a 64-bit OS which can not only run 32-bit software, but also utilize more than 4GB of ram. Vista Home Premium or better.

No, I don't think you need a powerful 3d card since you don't game and render 3d. For 3D rendering, you'll benefit greatly from a workstation card like:

Yup, I realize they cost an arm & a leg, but they are priced so high for a reason: superior 3d rendering speed. Beating out any 3D gaming cards. You can find 'em on ebay for cheap. New & used.

Have you picked out the other parts like hdd, dvd, etc.?

Thank you for your reply.

I haven't picked out the other parts yet, but I will have to do that today/tomorrow and buy the hardware next week.

Asus mobo's are nice.. The choice will probably be Asus or Gigabyte, dunno which one yet, I will have to compare them.. Since I'm almost sure that I am going for the i7 I won't have much choice :)

Cooler will probably be a Scythe Mugen 2..

HDD -> I'm thinking a small but fast hdd for OS + Apps only (raptor or something like that) and a bigger drive (500gb or 1tb) for file storage (a samsung spinpoint maybe)

I want one good disc drive for burning and reading all kinds of dvds/cds... maybe a Plextor

Scrap the Mugen unless you quietness. Swap the stock one out for this if you overclock the cpu.
