Computer freezes up when under stress

Hey guys, so a day or so ago my computer suddenly froze on me and ever since it's been acting weird. I've cleaned out everything and it crashes when playing games or under heavy load. I have an AMD-A800K 3.6GHz, GTX 560 SE and a 750 watt power supply. I'm not a tech geek, so I don't know what's really causing it. My cpu temp fluctuates, and when in a game such as minecraft goes upwards of 60 celsius, peaking at 75 before eventually freezing 5-30 minutes into play. Anyone know why?
 
I wish AMD could provide reliable documentation on their CPU (and GPU) specifications. I'm not familiar with AMD CPUs as it has been a long time since I owned one.

Reading forum posts though, AMD CPUs should run cooler than Intel and 75C would be too high. It could be what is causing your computer to freeze.

I'm edging toward the gpu at this point.

I switched to onboard graphics and took the card out, now it's running smoothly. I'm gonna try another card tomorrow and see if the problem returns.
