Considering an upgrade from a GTX 970 to a GTX 1080 - Should I expect to bottleneck my 3570k?

I am currently running a triple monitor setup with three 27" 1080p monitors. My current graphics card is an EVGA GTX 970 FTW that I have been very happy with. In most cases I have been able to run graphic intensive games on high settings, including the Witcher (although, I don't push close to 60 frames).

I will be looking to buy an Acer x34 Predator. This is a 34" curved ultrawide 1440p monitor that can oc to 100hz and has G-Sync. The pixel count on an ultrawide 1440p (3440x1440 .. about 5 mil pixels) is less than what I am currently running: 5760x1080 (about 6.2 mil pixels).

With this said, I know that the EVGA GTX 970 FTW would run the ultrawide 1440p fine, but I would not be running at 100+ frames without a serious knock to the visuals. I was considering upgrading the card to an EVGA GTX 1080 FTW and that is where the question comes in...

I am currently running my 3570k at 4.2ghz. I have found stable numbers for 4.4ghz but the temp increase wasn't worth it at this time (I like to keep my GPU and CPU under 70C). I am curious if the EVGA GTX 1080 FTW would bottleneck on the 3570k running at 4.2ghz. Also, does anyone happen to know if a single GTX 1080 is consistently able to run upwards of 100 frames at 3440x1440?
