I see a lot of people saying that 2600X stock cooler would be enough, but I live in Rio de Janeiro - Brazil, here temperatures can get above 40º on summer, but it's usually hot all the year, even some winter days, so I don't know if stock cooler would be enough.

What would guys think and which AIO/Air Cooler I should use?

My case is Sharkoon Tg5 and can use up to 360mm radiator.

I recomend going for a air cooler , not liquid , being less effective on long runs in a hot room .

Go with any tower cooler that has at least 3 cooper pipes , be quiet Shadow Rock 2 , Dark Rock Pro 3 .
If you really want to go liquid , even if i dont recomend it , go Cooler Master LM240I . If you decide for this one i recomend a push / pull config

With 167mm of CPU cooler clearance in your PC case and high ambient temps, i'd use Be Quiet! Dark Rock Pro 3 (at 163mm tall) in there,

Dark Rock Pro 3 is one of the best CPU air coolers, being only few degrees short of king of air coolers (Noctua NH-D15 / NH-D15s) while looking considerably better.
So, this product specifically do not ship to my address on Amazon and I have to pay almost the same price as the cooler on OutletPC, I only found one store with NH-D15 in Brazil but they are extremely expensive, i found NH-D14 for an affordable price here, is that one good enough ?

Maybe I am asking too much, you don't have to do it, but if you can find a good cpu cooler on this store, it would be perfect, it's the best hardware store we have, usually product models and manufacturer names don't translate so maybe you will not have a problem reading, but everything else is in portuguese so you really don't have to do it.

Did check your local store and not many dual-tower air coolers available there. The few i found are only from Deepcool, like:

Note 1: since CPU cooler is 167mm tall thanks to the middle fan, it may touch your PC case side panel.
Note 2: make sure it has "AM4 Ready" sticker on it's retail box since else-ways, you won't get AM4 mounting bracket with it and you can't mount your CPU cooler. If there is no AM4 bracket in the box, you need to buy one separately,

Though, NH-D14 is still good option (160mm tall) with dual towers. But it has the very same problem as Assassin II where it flat out doesn't come with AM4 mounting kit at all and you need to buy one separately, namely Noctua NM-AM4,
