Certain things will benefit from 8 cores...
Games? Not so much.
(Great for my BOINC team though!)
I'm going to grab an FX8350 while they are on-sale for only $195 bucks (Canadian).
But yes, your 3-monitor SLI setup would prefer the 3570K.

in this test setup. they used an i7 3770k. you can see some 5760x1080 benchmarks too .. and I dont think 3570k will bottleneck your 670 SLI setup...

it's like asking should I get a Mercedes or a Volkswagen. Both will do the job of getting you around at a normal pace but if you want to 'drive fast' you're better of getting the Mercedes.
Your budget and what other tasks would you want to do on your computer should determine which of these to get. They're just not in the same ballpark.

in that guru3d benchmarks they used an i7 760 extreme cpu , so i5 3570k is still better than that i7 ..

according to techpowerup benchmarks you can still play most of the games on 5760x1080 (30+ fps)

if you think you need more frame rate you can always go with gtx690 or gtx680 SLI

according to these benchmarks you can get 50+ fps (5760x1200) on most of the games including Metro 2033 with 680SLI and GTX690
