Hello. It goes very well for video editing with Premiere, DaVinci Resolve, and for making 3D animations, for effects it is very fast. I have seen in the news that there is the new Core i9 12900ks and that soon you will have the Core i9 13900K. Is it better for work? It's worth it? Compared to Core i9 10980Xe. Thanks. All the best.

What app(s) do you use for video editing? Could you provide some link to the sort of work you produce?

One way to assess processor capabilities is to look at the passmark ratings.
If you now have a I9-10980XE processor, it will have 36 processing threads.
If all 36 are fully busy, the passmark rating is 33344.
But, to manage many threads, there will be a master thread that needs to be fast in single thread processing. The single thread rating is 2672.

The theoretical underpinnings are explained in "amdahl's law"
https://en.wikipedia.org/wiki/Amdahl's_law
The I9-12900KS is a well binned version of the I9-12900K.
It has 24 processing threads(8 of which are slower efficiency threads)
and a rating of 44499. The single thread rating is 4381.

Is such a processor worth it to you?
Only YOU can decide.
Such a change would also include a new motherboard and possibly ram.
This fall the 13th gen raptor lake processor is due to launch.
The top end will include more processing threads and likely a modest boost in single thread capability.
