What exactly are the more Cores instead of GHz for?

More Threads have the more Cores, but what usage exactly are they better at?

For gaming, you would be much better off with the i7-4790k since most games are moderately if not poorly threaded - they rarely make significant use of more than two cores. A 2.4GHz Xeon is no match for a 4GHz i7 in gaming because practically no games are anywhere near sufficiently threaded to leverage more than four cores.

More threads are good for massively parallelizable stuff like video effects processing, finite element analysis and other large matrix math.

"More GHz" is more useful for applications that tend to be bottlenecked by their main thread such as the bulk of games out there and the UI of just about all software.
