You control fan speed and pump profile via the USB, the fan header just has a sense wire, so it will run at one speed constantly without USB. Blue is probably the default color.
The h100i has RGB LEDS, you are able to change the colour through corsairs "corsair link" software. (assuming you have the USB cable plugged into the device)

I have not connected any USB cable to the device, which is why I do not understand how the color suddenly changed.
hmm thats strange. Is there any reason why you don't have the cable connected? Also, try plugging the cable in and changing the colour through the software, then reboot your pc and unplug the cable (if you insist on removing the cable)

Not really. MaybeI thought I'd need the Corsair Link box or whatever in order to make use of Corsair Link's features. It's been a few years since I bought it, so I am not sure why. Either way, changing the colors on the cooler is a useless gimmick.

The default color is white. I'll check whether I've used the USB when I get back from work, just to be sure.
