1). Unknown, we're building the system around the r5 1600 that he got on a huge sale. Depending on luck and budget, he could get a GPU anywhere between 1060 to 1080, I know that in some cases it's overkill, but he's overclocking more than one part in the system and it needs to be stable. As for RAM, click here to see the options

Either one of these units would be an amazing choice. If you need clarification just look up reviews on these models on Jonnyguru, a site that specialises in psu reviews, and see for yourself. I would just go for what ever is cheapest from that bunch.

This build with GTX 1080 + everything overclocked won't reach 500W, 750W is pure overkill. But nothing wrong with buying a beefier one and being future proof.
Either one of these units would be an amazing choice.
Greeko85's right. All of them good overall. Check out EVGA - SuperNOVA power supplies too. You might find a good deal.

A good 550W PSU will be fine for R5 + GTX 1080 with overclocking. A high quality 650w would even allow for R7 + 1080ti with high overclock.
All three PSUs you listed are high quality. I recommend the RMx and Focus over TMx mainly due to the 7ms+ longer hold up time, which could be useful in areas without clean electricity.
