Corsair XMS 3500?

I am thinking of ditching my old Crucial 2100 DDR for some Corsair XMS 3500. My motherboard is only rated for 333mhz DDR (Soyo KT333 Dragon Ultra P). My question is what are the benfits of spending an extra 15$ on this ram, rather than getting XMS 2700, with my motherboard only being rated at 333 mhz. Also more importantly, is 1 Stick of this ram better (512mb, cheaper), or 2 sticks (256mb, more expensive by 15$ or so). I am planning on overclocking my Athlon XP 1600+ with this memory.
