Question Cpu bracket replacement

I took of the brackets from the motherboard to instal Amd stealth cooler but I got a new hydro h100i cooler and the brackets won’t go back on

What brackets ? Hydro h100i uses own mounting kit that screws on back plate behind CPU at the back of MB. Make sure you use appropriate (AM4 socket) kit

That's incorrect I have installed about of 11 of those on AMD AM4. Maybe what you mean is that the Hydro h100i has an AM4 bracket that installs under the Hydro h100i that allows for it to fasten to the actual motherboard retention brackets. OP would need to reinstall those. Start at about 4:10 in this clip you will see what I mean.
