I have the posibility to buy a unused i5 3470 with 30$ and I want to pair it with a h77 mobo (and overclocking the cpu as much as possible 3.2 -> 3.6 / 3.6 turbo -> 4.0 turbo)

The question is: how much of a bottleneck will this be for a gtx 980 ti strix?

yup it wouldn't bottleneck your GPU.

seems like you can actually overclock it by 400Mhz by adjusting base-clock but I'm not sure if the H77 chipset (rather than Z77) allows it so you might want to google a bit more for success stories!
that's quad core which supports PCI-E 3.0. well capable of handling 980 Ti SLI without issues although the single core performance for games at 3.6 ghz turbo leaves much to be desired.
and 3470 is not overclockable. you need to get the 3570k and a chipset for overclocking ie z77

so personally i will go with unlocked maxwell / skylake processor if you're spending on a gtx 980 ti
