Question CPU/GPU usage drops and Disk O C: spikes to 100%

I've ran into an issue where randomly the PC will completely seize up and freeze. I can't do anything when the freeze happens until it runs its course which is usually 5-10 seconds. It will happen spontaneously if I'm simply running YouTube or playing games which are very demanding such as Fortnite. Attached is a screenshot when the freeze occurred, what I noticed was my CPU drops from 30-50% instantly down to 5-10% and my C drive (SSD) will spike to 100%. I downloaded Open Hardware Monitor and all the temps were completely fine and I also checked the health of both my drives which are healthy at 100%. Any help would be greatly appreciated!

CPU: Intel Core i5-8400 CPU @ 2.80GHz
GPU: NVIDIA GeForce GTX 1060 3GB
RAM: Team T-Force Dark 3200MHz 8GB (2x4GB) DDR4 Grey Black
SSD: Kingston A400 2.5in SATA SSD 240GB
HDD: Seagate Barracude 1TB ST1000DM010

and the ram usage? what else are you running beside the game?
I typically run the Brave browser which has YouTube going (similar to google chrome) and discord. Although this freeze will happen even when I'm not playing games, when I'm just watching YouTube or multi-tasking a Word document with a browser open. Memory is at 73% which it usually performs at when running games such as Fortnite.
