CPU-intensive settings in Assassins Creed Origins

I've just upgraded to a GTX 1080, but my other components are sadly a few years old - i72600 (non-k model) and 16GB DDR3.
Most games aren't much if a problem, but I am really struggling with Assassins Creed Origins. I understand this game is fairly CPU intensive anyway, but this is ridiculous.
Are there any specific settings that I should be focusing on to boost CPU performance?

Solution

Your CPU is a bottleneck to the GTX-1080 period.
You are not able to Overclock the i7-2600 and so a lack in performance.

You therefore have a choice, upgrade your CPU and stay with your current DDR3 memory or as I and many have done, change to the new AM4 platform with faster DDR4 RAM and maximise your game settings.
I play Origins and its superb playing at 90- 110 FPS. I also have a GTX-1080.

Again, that doesn't answer my question. I know my CPU is a bottleneck. My question was whether there are any CPU-specific settings that I can reduce to help with this.
