CPU temps while stress testing

Overclocked i7 8700k, 5ghz at 1.29 v, using a Corsair h100i v2 to cool it. Temps are perfectly fine but I noticed that when stress testing (I used Intel ETU to stress) my temperatures seem to fluctuate by 16 degrees going from 78 C to 62 C every few seconds. From my understanding, I thought it was supposed to plateau at the max temp and stay there, fluctuating only a few degrees. Am I wrong and is this normal?

It seems to be just the test used not reading temps right, it should go fairly flat after about 10-15 mins on a liquid cooler. Try downloading Aida 64 and run it's stability test, stress CPU FPU and Cache and report back what happens.

Aida64 stopped after only a few moments with the message "Warning: Hardware failure detected! Test stopped". Something is definitely wrong but I'm unsure as to what

Hmm, yeah something is wrong. Can we get full specs? GPU Motherboard all drives PSU?

Yeah sure, Zotac 1070 Amp! Edition, MSI Z370 Gaming Pro Carbon AC, all drives? (not sure to read as like hard drives or something else), EVGA 550 G2

Drives as in Hard Drives, SSD's, Optical Drives, or that nostalgic Floppy Drive you somehow wired up.

Oh lol, 1 1TB HDD, 1 2TB HDD, 1 SSD, 1 Optical CD/ROM drive. Are you doing a power wattage calculator?

In my head yeah. But that system should be under 550W's. However my first suspicion is that hefty CPU OC. try dropping back to stock and re-running the test. That seems like a high clock with a fairly low voltage.

So lowered it down to 4.4 ghz (I couldn't find how to reset oc values to default so I just lowered it along with voltage to 1.2), Aida64 ran solid for an hour along with max temps being 75, while before at 5 ghz Aida reached 92 C which is not comfortable for me

Technically speaking 92c is fine, but I don't blame you for wanting it lower. Try going for 4.8GHz with a solid voltage. It sounds like your CPU overclock wasn't stable under full load causing Aida 64 to crash.

The 8700k uses a really bad thermal "paste" between the CPU die and IHS (integrated Heat spreader) on top of the CPU, this means the heat transfer is poor, causing your system to hit 92c easily at 5ghz even though your cooler is adequate.
