Who makes the server? HP, Dell, home built?
CPU-z shouldnt hurt the server, it might have issues figuring out what motherboard and CPU is installed. I have CPU-z installed on a HP DL380 gen 9 server with server 2016 data center installed, the HP software gives more information then what CPU-z does so i find it pointless.
Im not familiar with dell servers but they should have monitoring software for it. Looks like they have iDRAC7 that should come with the server.

What are you trying to do with CPU-z?
CPU-z wont tell you ether of those things. If your trying to figure out loads then open up task manager and use the resource monitor. You can ether watch the overview tab or switch between the CPU or Memory to see whats going on.
