It's always best to list the Part No or SKU of the RAM kit you are using with this kind of issue Sam.
Easy Overclocking profiles differ depending on the Motherboard and Chipset.
XMP profiles for Intel based systems and D.O.C.P for AMD Motherboards and the particular profile works in conjunction with the IMC (Integrated Memory Controller) on the chip.
Overclocking enthusiasts generally understand the importance of Primary Timings and Dram voltage and how to Tweak SPD (Serial Presence Detect) in Bios for stability.
Selecting the correct RAM kit is important and for the beginner, it's best to choose a kit the size and frequency your MB and CPU supports that have been tested and known to work then listed on the MB QVL.

If you choose a kit of RAM that are OC then they may not have an Overclocking profile or the profile may not work and so you have to manually Tweak Bios DRAM timing control and Dram Voltage to get them stable. Even then there is no guarantee you will achieve their rated frequency.
If your choice of OC RAM has a frequency beyond what your system supports then you may have a very frustrating experience.
These are just the basics of understanding as it can become extremely complex the more you delve into it.

More better advice can be offered once your RAM is known.
Your i7 10700k officially supports DDR4- at 2933Mhz.
Ensure your Bios and chipset are up to date.

I've looked around for a safe profiles and its a lot to take in and not able to figure out voltage/timings and looking for advice, currently sitting at 2133mhz

Set XMP then raise the voltage to 1.4.
Also this is complete garbage.
