I am planning on getting 2 Sapphire Radeon R9 290's (Vapor X) But is it overkill for 1080p? What about 5760x1080p? I am planning on the triple monitor surround thing.
And how many watts do I need for dual 290's?
Other specs: i7 4790k, MSI Z97 Gaming 7, 1 SSD, 1 HDD, Corsair H100i, 7 Case fans and Crucial Ballistix Tactical 16GB

Solution

For 1080p-Yes righteously.
Triple monitors- No, perfect amount of power for 5760x1080p.
You will need a 850w psu or higher to run those cards safely.

Solution
A single 290 is pushing it for 1080p + 60 Hz. That will run pretty much anything at max detail, as long as you aren't trying to force like 16x MSAA in Crysis 3 or something unreasonable like that.

I agree that 850 W sounds about right, however its not really an issue of safety, per se. Your system might BSoD or shutdown/restart if there is too little power, but as long as the power supply is good quality with good voltage protection and operating properly its not likely to do any damage.

Is the Corsair RM850 good?? Because I can buy it with the 290 for less money

Yes that is a quality psu. Go for it.
