Crossfire xfx Radeon r9 280x

I've got everything installed and 2 Xfx Radeon r9 280x's a MSI z87-gd65 MB 1000watt Evga PSU core I7 and 16 gb of g skill ram so my question is do I use SLI or Crossfire to connect the GPU's

Crossfire is for AMD cards such as yours. SLI is the nVidia equivalent.

So the bands that have crossfire over the top should connect to the cards and the rest is taken care of through bios and software set up

Yes, you need the Crossfire bridge. The rest should be set up in the Catalyst Control Center.
