Question Custom gaming PC crashing

Hey, hoping I can get some advice here. I have a PC I built a few months ago primarily for work and casual gaming. It's a pretty high end build and shouldn't be running into issues such as crashing on Fortnite at 120 fps. My CPU usage has also went to 100% at times from just having a lot of chrome tabs opened and crashed.
My components are as follows -

First issue I ran into when putting the build together was that I couldn't get it to run on 64gb (4x16) of ram. I had 2 sets of the 2x16 g.skill ram and when I tried to boot at 64 it would either not boot at all or boot and crash shortly thereafter. Had a friend try to walk me through tinkering with xmp1 and 2 and various voltage settings but we could never get a stable configuration so I've been running it with just the 32 gb of ram. I don't know if the memory alone can be causing my issues but I suspect it might be contributing.
Any advice to make my PC run better would be greatly appreciated.

The PSU is EVGA SuperNOVA 1000 T2 220-T2-1000-X1 80+ TITANIUM 1000W
I updated the BIOS when I first put the build together - BIOS Version/Date American Megatrends Inc. 1202, 10/27/2021 .. I'll update and see if it does anything.
