I would like to overclock my G.Skill Ripjaws V F4-2400C15S-8GVR DDR4 8GB x 2 (16GB Dual Channel). Default XMP Latency for 2400Mhz is: 15-15-15-35-2N.

Can I overclock to 2666 or 3000Mhz? With what timings and voltage? I have Gigabyte B250M D2V motherboard with i5 7500. The bios has the options to add custom timings etc.

Once you go past the official stated speed and timings you will have to do what you do with any overclock.
Chances are you will have to loosen the timings to get higher speeds or increase the voltages to keep current timings at higher speeds.

Managed to get stable 2666mhz with default timings and 1.2v. Cleared memtest and so far no issues in Witcher 3 for one hour. I will stay with 2666 as I don't want to add more voltage (yet).

You were able to get 2666mhz with xmp enabled ??

XMP is not a setting per-say, it is just a profile of settings that the manufacturer have verified the RAM will run okay at. On DDR4 2400 RAM the XMP profile will be configured for running the RAM at 2400mhz so to "get 2666mhz with XMP enabled" you will need to buy RAM that is rated for 2666.
