Question DDR5 Memory Speed Question

I am planning to build a gaming PC for both gaming and some basic drone video editing. I have researched the RAM recommendations and the recommended sweet spot for DDR5 for gaming is 6000MT/s memory speed. I am using PCPartpicker.com to select RAM options for my build. PCPartPicker list various DDR5 speeds such as DDR5-6000, -6400, and -6800. Would DDR5-6000 be the RAM spec I would select for the recommended 6000MT/s? If no, what RAM speed would I look for? Also, would 32 GB be enough for both gaming and basic video editing or should I go for 64 GB? Thanks in advance.

Thanks for the RAM speed info. I have not selected a video editing software yet. Adobe is possible, but I will also look at cheaper options. I don't plan to do Hollywood level stuff. I just plan to do basic drone video editing and add basic animation or graphics to the videos.
