Im changing from an MSI 2060 Gaming Z to a MSI 3060 Ti Gaming Z, would people advise to use DDU or just leave the Nvidia drivers there?

As long as the driver version you have is compatible with the hardware, it's normally okay to just leave it alone. If you encounter issues, you could skip straight to DDU, but I normally advise simply reinstalling/updating the drivers with a the "Clean installation" checkbox ticked.

EDIT: Also reboot after doing any driver updates.

With a clean install, (DDU or through the driver application) you ensure the device ID is wiped for the new GPU. Without, it can have issues. With that said, and as @hotaru.hino said, I've swapped out GPU's covered by the driver without issue at all many times. Eventually you get around to doing a clean install of the driver anyway, so best practice.
