What kind of CPU should I use for a commercial dedicated gaming server? Would like to be able to access over 40 games at the same time and be able to host several hundred players simultaneously. You always hear speed for gaming, but when providing the gaming and not actually playing the games does the scales tip.more towards cores than speed.

You are not measuring a server by "number of games to host". You should know other parameters, and in your case, the best approach is to build a test setup, and see how it works with your game servers. Hosting 40 different servers might be a challenge as well (imagine these game servers have incompatible OS requirements), pushing your task further up in defining (you might need to host several OSes into a virtual environment).

You should measure: I/O (network) bandwidth, storage bandwidth, RAM requirements. CPU comes last.
