I have a custom case which can fit two power supplies, and instead of buying a new more powerful PSU to power the whole rig, I want to use one I have laying around just for the GPU (MSI Radeon RX570 8Gb OC). It's a 500W Sentey PSU (14amp in +12v rail). Would it be enough to power only the GPU (and maybe one ssd)?

A '500w' psu with only just enough 12v power to run a 570!?!?!

No absolutely not, buy a single decent psu to power the whole rig.

Apart from the fact you'd have to run jumper cables from one psu to the another to get the second to start on boot its an accident waiting to happen when one of them is that dire.
