We have an old diagnostic device that prints to an attached printer using a parallel port. After printing, we have to scan the printouts because we ultimately just need a digital file. We're trying to cut out the time-consuming steps of printing then scanning by attaching some sort of device that "captures" the print data and "prints" it WIRELESSLY as a pdf or jpg to a location on the network. Is there such a thing?

Examples of related devices are here:

An example of a "standard" solution for my industry is here:

But I feel like there has to be $30 dongle somewhere, and I just don't know what words to search for.

Could you be more specific in terms of the hardware you're using? Namely the full system's specs and the "printer" you're trying to experiment on. My preliminary search
http://www.printrecorder.com/
http://www.printfil.com/manualen/c7.htm
indicates it's not possible wirelessly but it's probable that a further elaboration on your part can clarify whether the technology exists.
