Did I overclock too much?

I overclocked my Sapphire Radeon HD 7870 from 1050MHz to 1250MHz and memory clock from 1250MHz to 1400MHz. My games are running without problems at the moment, they did however shut down at 1300MHz.

Is 1250MHz too high (because 1300MHz sure was) or is it ok if my PC can handle it? (in the long term)

Those are pretty high IMO. Have you really stress tested them? Download the free "Heaven" benchmark and run that with your current OC. As "ed d" pointed out, your temps are a big deal at that clock rate.

My ambient temp is around 20° and I'll come back to you with my load temp in 15 minutes.

If you get a temp spike of about 95 degrees your card will shut down
 


I've tried it on 1920x1080 on high settings, and my computer crashed. I'm going to put the it on 1150MHz and memory clock on 1300MHz and gonna see what happens. I'll come back to you with an answer in 15 mins.
 


I did the test on 1920x1080 4xAA High Quality (clock speed: 1150MHz, memory speed: 1300MHz) and after all the scenes (4~5 minutes) it was on 86 degrees, should I turn up my fan speed from 40% to 50% (I don't mind the extra sound) or is it ok?
 


Yes, definitely set up a fan curve that keeps it from a throttling temp. Some may disagree...but I'd rather have a modest OC and sustain the longevity/stability of my cards...then to "blow the doors off benchmarks" and risk things.
 


Your temp is too high:

1) lower the OC
2) increase fan speed
3) lower the lifetime of the card by keeping it how it is

You have to choose one of those options
 


I have increased my fan speed from 40% to 55% and the temp is around 65/70 degrees when playing crysis 2/dead island riptide. I'll probably have a new videocard by the time my card dies on me.

Should I keep my settings on 1150MHz?
 


If the temps are 70 degrees on max load then you do not need to decrease the clock speed
