What are the actual main differences between the corsair RM and AX series. I know that there is extra warranty and Platinum Rating but is that it? Why does the AX860 cost so much more than the RM 850?

The rating makes the big difference. Refers to the efficiency of the PSU at max power draw. The AX860 is more stable and efficient at max.

So it basicly comes down to reliability, quality and efficiency.

How come the RM series is below the HX?

The HX series are better power supplies.
