Difference between Windows 7/8/10

Can someone tell me the difference between windows 7, 8, 8.1, and 10?
I've been using windows 7 since it came out, used vista, xp and 2000, and so far, the best I've used was 7 (Obviously)
But I've noticed that everybody is switching to windows 8.1
I'm building a new PC but I don't know what OS to go with. Ive heard windows 8 is better with direct x 11.2 (Or something like that) And it gives you a significant FPS boost, But from the layouts that I've seen, I don't know if I would like the "Tile" Layout type thing on 8.1.
Basically what I'm asking is, Which OS would be the best option for overall performance ( Gaming, Editing, Streaming, Multi-Tasking, Everyday Tasking such as YouTube Netflix and Twitter)
Is there actually a performance difference?

Windows 7 was the best when its predecessor vista failed miserably, but recently enough Microsoft has improved in leaps and bounds in making the UI more user friendly the tiles you mentioned in 8.1 were a huge Fail in desktop versions it was only a hit in tablets but all that has been put aside by windows 10 has gotten a lot of attraction lately ( there are issues about privacy which concerns me i am moving to mac for sure but that's just me ) it has a more clean, smooth and a appealing interface better multitasking features particularly the snap feature i love it also cortana is sick it is totally integrated with the new edge browser which is brilliant ( again if you don't care about privacy you can enjoy all these features)...
