Can I say... build up one car really nice, then start to build up a second?
Or do I have to trade one in for another? I am not quite sure how that
works... when you start with a new car with base stats, do you start racing
the newbie races?.. or do you start racing where you left off with the
souped up car? How does that work? Do you keep the same sponser for both
cars? Can someone explain this to me please?

-TIA

to be able to build new cars you will have to unlock the slots available and
this happens with sponsorships where a sponsor awards you with a car or the
possibility to choose one when you fullfill the contract.
if in the meantime you want another car you have to trade in one of your
existing, losing every upgrade you may have put on the car.
As for your other questions I believe its the "you" factor that counts,
changing car doesn't affect the point reached in your career or spondor
agreement, however opponents cars seem to adapt to your changes.

So... say for example I am 99% through with the carrer and I get a new
sponsership car. Is there anyway to make money to soup it up?... since doing
a completed event doesn't give you any more money.

Five cars you can get, but I doubt you can upgrade all of them. But the
money should be enough to upgrade 3 cars.

i'm at 63% of the career mode and I already have 4 cars ( peugeot 206, audi
tt, ford mustang gt and a hummer) and I believe there should be enough room
to make money for all upgrades, as currently url races victories are paid
7000.
however so far i only upgraded the 206 and the tt, they have almost all
upgrades, a couple of stage 3 upgrades are still locked, the other 2 have no
upgrades, strange enouff all upgrades for the hummer are locked.
anyway I still use the 206 for all my competitions as the other cars are too
unstable, i've tried adjusting the settings but they still give the driving
a boat feel which obviously makes it difficult to win races.

MX5 for drift and streetx and 350Z for everything else does it for me.

If you're using a PC, you can do a web search for trainers that can add
money to your account.
