Digital Output (Optical) to analog

I have a 7.1 analog surround sound headset. I wanted to use it with my Xbox 360, I know that Xbox only handles up to 5.1 sound channels but I don't mind not using the side speakers in the 7.1 configuration. I was just wondering if their was an DAC adapter of some kind that would convert the digital output to 3 analog outputs.
