Question Do I choose 3950x or 5900x for digital animation and rendering?

I'm planning on getting a 5900x since on second hand market I've seen $600 pricing, but the 3950x for the same price or slightly cheaper has more cores. Which of these cpus do you think will age the best in a system that is expected to last for at least 5 years? This pc will only be used for computer animation / design & illustration work?

3900x on Asus x570 - E Strix Gaming Mobo
(32GB x 2) 64GB DDR4 ram @ 3200 mhz
Radeon VII
500GB Samsung Evo 860
8TB Seagate Hard Drive
850w PSU
6E Wifi Card
Asus 2.5GB Network Adapter

I'll just purchase a 5900x since I can find it close to MSRP then purchase a 5950x later..... $500 - $600 dollar's is my budget after selling the 3900x for $300 anyway...

I believe the improvement in the 5900x over the 3950x are primarily in latency.
3950x has the extra cores that might be more useful for your application than the reduced latency of 5900x
5900x has the single core speed and the 3950x has more overall power with 16 cores.
