Building my first gaming PC
looking to play games such as mine craft, terraria, gta, saints row, garrys mod, portal, half life, skyrim etc. Etc
I have found a couple of cards I like the look of but I have no clue into whether I will need 1GB of memory or 2GB of memory on my gpu
please help!

The minimum is 512MB.

So, 1 GB is generally sufficient for resolutions below 1920 x 1200. It will vary in some instances, but the important thing is the power of your GPU, not the amount of Video Memory.

It sounds like you'll be fine!

If your getting a card now, then grab one with 2GB or more vram. Games are starting to pack lots of textures with games and the more vram your card has the better it is to handle all those game textures.
The amount of vram does not represent how fast card is.

For full hd gaming, I would recommend no lower than a 7790. The 7750 is not powerful enough to run games at that resolution

Yes, you should be fine with that card. Make sure your psu can power it, though

My budget is £400 excluding monitor and peripherals
CPU: AMD FX-4130 @3.8GHz
Mobo: Asus M5A78L-M/USB3 Motherboard
RAM: Kingston HyperX 8GB
PSU: CIT 650w Gold 12CM Silent Atx Power Supply
OS: Windows 7
Case: CiT Vantage Purple LED

Best I can do with that budget

Also, what is better? FM" or AM3+?

The R7-260x is basically a rebadge HD7790
AM3+ is better but for very tight budget, FM2 are not that bad either. The newer CPU will be FM2+ but the processors are not out yet. The board I've selected is FM2+ which is ready for the newer CPUs when it comes out.

HD7850 will still be the better card out of the two.
