I have a gigabyte rtx 2060 6gb, its got a pointless crappy plastic back plate that i want to remove to improve the thermals as seen in a dawid does tech video. I have to remove the fan shroud to do this, do i need to apply fresh thermal paste when i put it back together or can i just stick the fan shroud back on? If i have to repaste it can i use any ordinary cpu paste?

Solution
if you separate the heatsink from the GPU you should always repaste.
I always shake my head when I see videos of people pulling the CPU/GPU heatsink off after applying TIM to 'see how it spread' and then just putting it back on. NEVER do this! Once you paste (very thin layer buttered toast method) and apply the heatsink you're done.
If you remove the heatsink from GPU, you have to repaste it. But if you can remove the plastic shroud without removing heatsink, then: no.
Ive already done it, i used a little bit cpu thermal paste i left over from a build i did. Dropped my gpu thermals by at least 5-6 degrees. Well worth doing as before it would sit around 78-82 when playing and drop clocks speeds to keep cool. Thanks for your input.

Likely you gained more than that. Most GPUs adjust their fan speeds to target ~75C under load. When I repasted my RX480, I lowered temps from 85C-73C while ALSO lowering fan speed from 2200rpm to 1100rpm.
