Do I need to use the ATX12V or EATXPWR or connect both to my PSU?

Both need to be connected. The 24 pin EATX power connector AND the 8 pin EPS ATX 12v need to be connected.

Are you sure you connected the CORRECT 8 pin connector to the 8 pin EPS socket? The ones labeled PCI/PEG or VGA are not meant to be plugged in there. Only the 4+4 pin EPS connector from the power supply should be connected there. And all ATX boards require the 24 pin connector, so that shouldn't be an issue either. Plenty of reasons why it might not display.
