Do I need x2 separate PCIe Power Cables to Power EVGA GTX 970 FTW or is x1 with Splitter enough?

I have the EVGA 1000w p2 PSU and a EVGA GTX 970 FTW card. It requires x2 6-pin power connections.

Should I use a single cable that splits into a 6 and 6+2?

or

2 separate cables (each of which end in a 6+2)

Will this affect anything? Benefit / dangers? I don't know enough about GPUs in relation to PSUs and cabling options.

Use a single one from your PSU to graphics card which has two connectors at the end. PSU is designed to be used this way. One cable per card. It would technically work even the other way around, but it is usually not advised (more cables for no reason).

Use two separate cables if you can. It will reduce the 'load' on the cable joints, plugs, and connectors. That PSU has six?? sockets to plug them in, and I'd use the cables with only one connector too.

You have a great PSU there. Good choice.

I note the earlier response and agree that the cables can be used that way and this is a good quality unit with good cables. I'd still use two.

Either will work but the PSU is designed to run one card per line, so you'll do no damage and take no risks by using a single cable to power the card.
