Do I want a 1080 or 1080 ti?

I'm having a bit of trouble deciding what graphics card I want to upgrade to, so I'd like some opinions on what to do.
-I plan on playing VR, and probably streaming/recording it.
-I only have 1080p monitors.
-Up to 60fps is fine with me for normal games, but I do have a 144hz monitor that'd be nice to get full use out of.
-I don't plan on playing the very intensive VR games like Project Cars 2 or flight sims.
-I play Skyrim with tons of graphics mods, which I'm sure either GPU's would do great with.
-I'd rather only have to pay a little more than original retail prices, as in up to about $750, maybe $800 for a 1080 ti, which means I'd be waiting and trying to snatch one from one of the few places that have the founders edition for 'normal' price. If I REALLY don't need a 1080 ti at all, I might be willing to buy something like the 1080 Duke from Newegg for $680.
-In terms of time, I'm hoping to have everything by May, which is when I'll be able to afford VR + a GPU up to $800.
