I noticed that RX 570 or 580 radeon cards have much more streaming processors than latest 5500 XT or 5600 XT radeon cards. Why is that? Will it affect gaming experience?

Solution
The 5500 XT and 5600 XT has an architecture which enables the stream processers to work much more efficiently than past gen cards such as the 580 and 570. Thus these newer cards will perform better despite the same or less amount of stream processor units.

But besides that, the VRAM and VRM modules are newer and provide better reliability which also add to the performance gains. In the end only the 5500XT was a let down as it performs nearly the same as the RX 580 at the same price.
