A PSU will generally operate most efficiently in the middle third of it's range.
Otherwise, no problem, it will only use the power demanded regardless of the max capability.
Usually, a 1200w psu will cost more than a 850W psu if that matters.

On Quality, the FSP aurum is tier 1.

Seasonic X series, 850 or 1050 would be equally good and should be cheaper.

If by "editing" you're referring to video editing, I would get a larger HDD. Uncompressed video can really start to add up quickly. Look into Handbrake and Xmedia Recode for video compression options.

Everything else looks good, if not a little overkill

I did find one problem in your build. the monitor you bought is a freesync monitor. not compatible with your nvidia cards( given you want the great benefits of freesync or gsync). Also that monitor supports 4k up to 60Hz, you have 2 gtx 1080s which is serious overkill considering 1 gtx 1080 can hit 60Hz on most games at 4k.
My recommendation is that you unorder 1 of the gtx 1080s so your not wasting 600 usd on frames you wont be able to see with your monitor. And replace the free sync monitor with one that has gsync, trust me, once you use gsync, its hard to go back.
Or keep both 1080s an unorder the monitor for something with a higher refresh rate or has gsync.

Great choice, its also a ips panel over the last one which is a tn panel. So itll have gsync along with better colors an viewing angles.
