Does anyone know how well an Intel 1007u would work in a plex server for transcoding?

I'm looking at a Celeron based Vivopc and the processor is an Intel 1007u. From what I understand, it should be able to easily play 1080p videos locally. What I'm curious about is whether or not it would work well as a plex server transcoding media files to other smartphones/tablets around the house. At most, I would either be looking at two 1080p transcodes going on at once or maybe one 1080p file being played locally while another is being transcoded for another device. Any advice would be appreciated!

A 1007u would definitely struggle to transcode two 1080p streams, and even one would be pushing it. You are correct about local viewing working easily, but 1080p takes a lot of processing power to encode, and the 1007u simply doesn't have it. Do you have a budget for an alternative PC?
