Does Quad Channel vs. Dual Channel really make a big difference?

I suppose it should make your computer boot a bit faster for one. But with SSD growing in speed, even as there are M.2 drives now to even boost that speed more, would it be noticeable? Presuming you reboot a lot I suppose.

What other applications would this effect?

How does this feature compare to raw RAM speed or CAS latency?

It only makes a difference for specific workloads and if one doesn't know they need it, they probably don't?

IIRC quad channel helps with programs that can benefit from taking advantage of multiple cores.
Servers, scientific workstations, 3D rendering, etc.
It's more about bandWIDTH rather than raw blinding speed.
