carbide spec-03 midi tower case (i currently have it, hence why I want to keep it if possible)

Not 100% sure on the motherboard or cpu yet.

is there anything else I need to worry about in terms of compatibility, other than the gpu's size.

Once you figure out the motherboard and cpu you can use pcpartpicker.com to check to see if everything is compatible. If you go with a new AMD Ryzen processor, it will come with its own heatsink/fan.

Pc part picker doesn't give size compatibility warnings but I looked up your parts and they will all fit together.

Nice case.
The motherboard fits, both are ATX capable.
The NH-D15 will not fit. It requires 165mm while the case allows 157mm in height.
Most ryzen processors will come with a perfectly adequate cpu cooler.
I would try that out first.
